M&M Cookies Recipe


Cookies, biscuits....so confusing. I would normally call them biscuits, but I know in the USA biscuits are what we call scones. Everyone knows what cookies are so let's just go with calling them that!

I've been trying to mix up the lunch boxes a bit lately and include some nice treats on top of the usual sandwich / fruit / water bottle combination. I baked these today and I don't think they'll last too long! They are nice and quick and once you've bought a packet of m&ms, you've probably got the rest of the ingredients you need in your pantry.

This batch would make about 12-18 depending on how big you like them. It's easily doubled or tripled if you need more.


M&M Cookies Recipe

Ingredients:

1 cup of plain flour
1/2 teaspoon of bicarbonate of soda (baking soda)
A pinch of salt
80g softened butter
1 egg
1 teaspoon of vanilla essence
1/3 cup of caster sugar
1/3 cup of brown sugar
1/2 cup of plain m&ms

Method:
  • Preheat oven to 160C (320F)

  • Put all ingredients except m&ms into the bowl of an electric mixer.
  • Mix on a low speed with the paddle attachment until mixture is combined and a smooth cookie dough is formed.
  • Add m&ms and mix through gently with a spoon so m&m shells are not broken.
  • Line a baking tray with baking paper.
  • Place tablespoon sized balls of mixture onto the tray.
  • Bake for 10-12 minutes until cookies have spread and are golden brown.
  • Cool cookies on the tray for 10 minutes then transfer to a wire rack.

Enjoy! The cookie dough is quite irresistible....there should have been at least half a dozen more in this batch. Oops. The cookies are also divine eaten warm, fresh out of the oven.


Yum! Variations - instead of m&ms, try chocolate chips or a mix of chocolate chips and nuts, like almonds, hazelnuts or chopped walnuts. You could also try the different flavours of m&ms.

  1. I think this recipe could be rather dangerous.

    I've been trying to make loads for the kids lunchboxes too and freezing. Do you think these would freeze ok? Though likely they wouldn't last long enough to freeze!!

    1. I think they would freeze ok because all the ingredients are natural. You could even make a batch of the dough and freeze that maybe? Just add the m&ms or chic chips once it's thawed?
