When my nose starts to run and my throat starts to burn, I always make a version of this soup. Colds are horrible and we are always cursed in this house with at least a couple of colds every winter.
I posted this picture on my Facebook page and got lots of requests to post the recipe, so by popular demand, here it is! Whip up a bowl of this and you'll instantly feel better.
You need -
Shredded meat from a supermarket bought barbeque chicken OR 2 poached and shredded chicken breasts
1 litre chicken stock
1 litre water
1 tbs vegetable or peanut oil
2 cloves garlic, crushed
1 brown onion, diced
1 hot red chilli, finely diced
1 stem lemongrass (white part only), finely shredded OR grated rind 1/2 lemon
juice of 1 lemon
thumb size piece of ginger, peeled and grated
1 large carrot, diced
1/2 cup long grain rice
salt and pepper, to taste
5 spring onions (scallions) finely diced
coriander leaves (cilantro)
In a large pot, heat the oil gently then add the onion, garlic, chilli, ginger and lemongrass. Fry until fragrant and soft.
Add the carrot and fry for another minute.
Add the rice, stock, water and lemon juice, salt and pepper, and bring to the boil, then reduce to a simmer for 20 minutes.
Ladle into a bowl, add diced chicken, sprinkle over diced spring onion and coriander leaves.
The beautiful fragrance from the herbs and aromatics and the goodness of the chicken and veggies will have you feeling better in no time!
